So while I have not resolved the slow speed in the VM issue, I am sticking a pin in that for now, so I can get my pfsense up and running. Before re-configuring the OpenVPN in this new hard drive, I decided to try bridging the 3 interfaces that will be used for the LAN side of things.
Why squid is so slow? Answer: The default configuration of pfSense is a router not as a server, that is why kern.ipc.nmbclusters="0". Simply remove this line and Squid will be just fine.
